From the Pyranees in northern Spain comes Gin Volcanic, and it’s pretty funky. To begin with, the base spirit is distilled from green walnuts, which are picked green and kept in alcohol for a year. Then, volcanic stones which are collected in the region are added alongside the botanicals, which are triple macerated. They include (to name a few) juniper berries, St John’s wort, cumin and chamomile as well as other traditional botanicals.
